Gingerbread with Bordier Butter with Chocolate and cocoa bean nibs from Ghana and mandarin peel

The ingredients

• 180g white flour
• 90g Bordier Butter with Chocolate and cocoa bean nibs from Ghana
• 70g buckwheat flour
• 120ml milk
• 220g honey
• 50g brown sugar
• 1/2 sachet baking powder
• 2 heaped teaspoons cinnamon
• 50g mandarin peel
• 1 teaspoon vanilla powder
• 1 pinch baking soda
• 1 egg

Preheat oven to 180°C. In a saucepan, melt the honey, brown sugar and milk until just boiling. Remove from heat and stir in diced butter.

Meanwhile, mix flour, spices, baking powder and bicarbonate. Make a well in the center, pour in the mixture melted in the pan, then add the egg.

You can taste to adjust the spices, although the taste will be a little stronger after baking. Pour the dough into a greased baking tin and bake for at least 30 min. Check every 5 min, as the tip of a knife should come out dry.
