Pear-tonka crumble with Bordier Butter with Chocolate and cocoa bean nibs from Ghana

The ingredients

• 2 Williams pears
• 50g Bordier Butter with Chocolate and cocoa bean nibs from Ghana
• 50g flour
• 50g almond powder
• 50g sugar
• 1 tonka bean

Preheat oven to 190°C. Peel and cut the pears into large slices and arrange in ovenproof ramekins. Grate a little tonka bean over the pears.

Mix the flour, almond powder and sugar in a bowl, then add the room-temperature butter in small pieces and sand until the mixture resembles coarse crumbs.

Cover the pears with the crumble and bake for around 20 min, until golden-brown.
